Vanilla Cupcakes

Ingredients:

  • Butter – ½ cup (room temp.)
  • Castor sugar – 2/3 cup
  • Eggs -3
  • Vanilla essence – 1 tsp
  • All-purpose flour – 1 ½ cup
  • Baking powder – 1 ½ tsp
  • Milk – ¼ cup

Method:

  1. Pre heat oven to 170 degree and line 12 muffin cups with paper liners.
  2. In a bowl, beat the sugar and butter until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Add vanilla essence.
  4. In a separate bowl, mix all-purpose flour and baking powder.
  5. Add the dry mixture into the wet mixture and mix well.
  6. Finally add milk and mix well and make a smooth batter.
  7. Evenly fill the muffin cups with batter and bake for about 18 – 20 minutes or until toothpick inserted into the cupcake comes out clean.
  8. Remove from oven and place on the wire rack to cool.
