Ingredients:
- Butter – ½ cup (room temp.)
- Castor sugar – 2/3 cup
- Eggs -3
- Vanilla essence – 1 tsp
- All-purpose flour – 1 ½ cup
- Baking powder – 1 ½ tsp
- Milk – ¼ cup
Method:
- Pre heat oven to 170 degree and line 12 muffin cups with paper liners.
- In a bowl, beat the sugar and butter until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Add vanilla essence.
- In a separate bowl, mix all-purpose flour and baking powder.
- Add the dry mixture into the wet mixture and mix well.
- Finally add milk and mix well and make a smooth batter.
- Evenly fill the muffin cups with batter and bake for about 18 – 20 minutes or until toothpick inserted into the cupcake comes out clean.
- Remove from oven and place on the wire rack to cool.
