BEDMI PURI:
Ingredients For Filling:
- Urad Dal - 1 cup ( Roasted & Powdered )
- Hing - 1/8 tsp
- Haldi - 1/2 tsp
- Saunf Powder - 1 tsp
- Red Chilli Powder - 1/2 tsp
- Amchoor Powder - 1/2 tsp
- Dhaniya Powder - 1 tsp
- Garam Masala - 1/2 tsp
- Salt to taste - Around 1 tsp
- Water as needed - to make dough

- Maida - 1 cup
- Suji- 1/2 cup
- Atta - 1 cup
- Kasoori Methi - 1 tsp
- Salt to taste - Around 1 tsp
- Oil - 3 tbsp
- Ghee - 2 tbsp
- Lukewarm Water to make soft dough
Method
- Mix all the ingredients of the stuffing. Keep Aside.
- Knead Bedmi Puri Dough & Keep Aside for 1 Hour.
- Take a ball of Bedmi , Press It little, add filling in Middle & Cover again & make Puri With Greasing Well. Make little thick Puri and allow it to rest for few min.
- Heat oil in Kadhai , fry puris one by one till light golden from both sides.
Aloo Subzi
Ingredients
- Besan - 1 tbsp (Roasted)
- Oil - 4 - 5 tbsp
- Hing - 1/4 tsp
- Red Chilli Powder & Zeera - 1 tsp each
- Ginger & Ginger chillies chopped - 1 tsp
- Tomatoes - 2 - 3 grated
- Potatoes - 6 - 8 Boiled & Mashed
- Water - As Required
- Salt - To taste
- Garam Masala - 1 tsp
- Amchoor & Kasoori Methi – 1 ½ tsp each
- Coriander Powder & Roasted Jeera Powder - 1 tsp
- Coriander leaves - 3 - 4 tbsp
- TejPatta - 2
- Laung - 4 - 5
Method
- Heat oil in a Kadhai for aloo sabzi , add hing , Jeera , Tej Patta & Laung.
- Add Haldi, Salt , Red Chilli Powder , Green Chillies & Ginger.
- Add tomatoes & Sauté well , Add Besan & Sauté Again.
- Add Mashed & Crumbled Potatoes.
- Add Water & Boil for 10 - 15 minutes.
- Add Coriander powder , Garam Masala , Kasoori Methi , Amchoor , Coriander Leaves & Bhuna Jeera Powder.
- Ready. Serve hot with Bedmi Puri.
