Motichoor ladoo Rabri parfait | मोतीचूर के लड्डू राबड़ी परफेट
BOONDI INGREDIENTS:
- Besan – 50 gm
- Water – 50 gm + 10 gm (if needed)
LADOO INGREDIENTS:
- Sugar – 50 gm
- Boondi – 50 gm
- Water – 50 gm
- Lemon juice – few drops
RABRI INGREDIENTS:
- Full cream milk – 1 kg
- Sugar – ½ cup
- Corn flour – ½ tbsp
- Grated khoya – 100 gm
- Pista (finely cut) – 1 tbsp
- Almonds (finely cut) – 1 tbsp
- Cardamom powder – ¼ tsp
Method
- FOR BOONDI: In a bowl, whisk besan & water till lump free mixture forms. Now fry boondi as shown.
- FOR LADOO: In a pan, add sugar and water and cook till little sticky sugar syrup forms. Right before the consistency of reaching one string.
- Now add boondi and cook the mixture till the boondi absorbs all the sugar syrup. Switch off the gas.
- FOR RABRI: Dissolve corn flour in ¼ cup of milk and keep aside.
- Boil rest of the milk in heavy pan till it reduced to half quantity (for about 30 min.) on medium flame stirring occasionally. Add sugar and corn flour mix. Cook for 4-5 min. more till the sugar dissolves.
- Remove from fire. Add in the khoya, pista, badam and elaichi pd. SERVE CHILLED.
- ASSEMBLING: Make a layer of motichoor in shot glasses.
- Now Pour rabdi on top.
