Sample Recipe Preview: Hariyali Paneer Tikka Roll

Ingredients

For the paneer filling:

  • 1 cup paneer cubes
  • 2 tbsp thick curd
  • 2 tbsp mint chutney
  • 1 tsp ginger-garlic paste
  • ½ tsp roasted cumin powder
  • ½ tsp chaat masala
  • ¼ tsp garam masala
  • ¼ tsp red chilli powder
  • Salt to taste
  • 1 tsp lemon juice
  • 1 tsp oil

For the roll:

  • 1 tortilla or roomali roti
  • 1 tbsp mint chutney
  • 1 tbsp mayonnaise or hung curd dip
  • ¼ cup sliced onion
  • ¼ cup sliced capsicum
  • ¼ cup shredded cabbage or lettuce
  • 1 tsp homemade Frankie masala
  • Butter or oil for roasting

For garnish:

  • Lemon juice
  • Fresh coriander
  • Chaat masala
  • Cheese, optional

Method

  1. In a bowl, mix thick curd, mint chutney, ginger-garlic paste, cumin powder, chaat masala, garam masala, red chilli powder, salt, lemon juice, and oil.
  2. Add paneer cubes and coat them well with the marinade. Keep aside for 10–15 minutes.
  3. Heat a pan and cook the marinated paneer until slightly roasted and flavourful.
  4. Lightly sauté onion, capsicum, and cabbage or lettuce for a few seconds, keeping the vegetables slightly crunchy.
  5. Warm the tortilla or roomali roti on a tawa.
  6. Spread mint chutney and mayonnaise or hung curd dip on the base.
  7. Add the sautéed vegetables and paneer tikka filling in the centre.
  8. Sprinkle homemade Frankie masala, chaat masala, lemon juice, and coriander.
  9. Roll it tightly, folding the sides properly so the filling stays inside.
  10. Roast the roll on a tawa with a little butter or oil until lightly crisp from outside.
  11. Cut diagonally and serve hot with chutney or dip.
