Sample Recipe Preview: Bhindi Masala
Here is a small glimpse of what you will learn in the workshop.
Ingredients
For the sabji:
- 250 g bhindi, washed, dried, and sliced
- 1 medium onion, sliced
- 1 tomato, chopped, optional
- 1 green chilli, chopped
- 1 tbsp oil
- ½ tsp cumin seeds
- ¼ tsp turmeric powder
- ½ tsp coriander powder
- ½ tsp red chilli powder
- ½ tsp amchur powder
- ¼ tsp garam masala
- Salt to taste
For extra flavour:
- 1 tbsp roasted besan, optional
- 1 tsp crushed kasuri methi, optional
- Fresh coriander for garnish
Method
- Wash the bhindi and dry it completely before cutting. This is very important to avoid stickiness.
- Heat oil in a kadai or pan.
- Add cumin seeds and let them crackle.
- Add sliced bhindi and cook on medium flame without covering.
- Stir gently and cook until the bhindi becomes slightly crisp and the stickiness reduces.
- Add onion and green chilli. Cook until the onion becomes light golden.
- Add turmeric, coriander powder, red chilli powder, and salt. Mix gently.
- Add tomato only if you want a slightly masaledar version. Cook until moisture reduces.
- Add roasted besan if using, and mix lightly for better coating and texture.
- Finish with amchur powder, garam masala, kasuri methi, and fresh coriander.
- Serve hot with roti, paratha, dal-rice, or pack in a tiffin.
