Ingredients
For the cracker dough:
- ½ cup whole wheat flour
- ÂĽ cup besan
- ÂĽ cup jowar flour or millet flour
- 1 tbsp sesame seeds
- ½ tsp ajwain
- ½ tsp mixed herbs
- ÂĽ tsp black pepper powder
- ½ tsp red chilli flakes, optional
- Salt to taste
- 2 tbsp oil or ghee
- Water as required
For finishing:
- Oil or ghee for brushing
- Sesame seeds or herbs for topping
Method
- In a bowl, mix whole wheat flour, besan, jowar flour or millet flour, sesame seeds, ajwain, mixed herbs, black pepper, chilli flakes, and salt.
- Add oil or ghee and rub it into the flour mixture until it feels crumbly.
- Add water little by little and make a firm dough.
- Rest the dough for 10–15 minutes.
- Roll the dough thin and even. Thin rolling is important for crispy crackers.
- Cut into squares, triangles, or long strips.
- Prick the crackers with a fork so they bake evenly.
- Place them on a lined baking tray and brush lightly with oil or ghee.
- Bake in a preheated oven until crisp and lightly golden.
- Cool completely before storing in an airtight jar.
