Ingredients

For the cracker dough:

  • ½ cup whole wheat flour
  • ÂĽ cup besan
  • ÂĽ cup jowar flour or millet flour
  • 1 tbsp sesame seeds
  • ½ tsp ajwain
  • ½ tsp mixed herbs
  • ÂĽ tsp black pepper powder
  • ½ tsp red chilli flakes, optional
  • Salt to taste
  • 2 tbsp oil or ghee
  • Water as required

For finishing:

  • Oil or ghee for brushing
  • Sesame seeds or herbs for topping

Method

  1. In a bowl, mix whole wheat flour, besan, jowar flour or millet flour, sesame seeds, ajwain, mixed herbs, black pepper, chilli flakes, and salt.
  2. Add oil or ghee and rub it into the flour mixture until it feels crumbly.
  3. Add water little by little and make a firm dough.
  4. Rest the dough for 10–15 minutes.
  5. Roll the dough thin and even. Thin rolling is important for crispy crackers.
  6. Cut into squares, triangles, or long strips.
  7. Prick the crackers with a fork so they bake evenly.
  8. Place them on a lined baking tray and brush lightly with oil or ghee.
  9. Bake in a preheated oven until crisp and lightly golden.
  10. Cool completely before storing in an airtight jar.
