Ingredients
For the cookie dough:
- 1 cup all-purpose flour
- 2 tbsp cocoa powder
- ½ cup butter, softened
- ¼ cup brown sugar
- ¼ cup castor sugar
- 2 tbsp milk
- ½ tsp vanilla essence
- ¼ tsp baking soda
- A pinch of salt
- ¼ cup dark chocolate chips
- ¼ cup white chocolate chips
- ¼ cup chopped dark chocolate
For finishing:
- Extra chocolate chips
- Chocolate chunks
- A pinch of sea salt, optional
Method
- In a bowl, cream softened butter, brown sugar, and castor sugar until smooth and light.
- Add milk and vanilla essence. Mix well.
- In another bowl, mix flour, cocoa powder, baking soda, and salt.
- Add the dry ingredients to the butter mixture and gently combine.
- Fold in dark chocolate chips, white chocolate chips, and chopped dark chocolate.
- Chill the dough for 20–30 minutes to control spread and improve flavour.
- Scoop equal portions and place them on a lined baking tray.
- Top each cookie with extra chocolate chips and chunks.
- Bake in a preheated oven until the edges are set and the centre looks slightly soft.
- Let the cookies rest on the tray before lifting them.
- Cool slightly and serve as rich, soft, bakery-style chocolate cookies.
