Sample Recipe Preview: Creamy Butterscotch Ice Cream
Here is a small glimpse of what you will learn in the masterclass.
Ingredients
For the milk-based ice cream base:
- 2 cups full cream milk
- ½ cup fresh cream
- ÂĽ cup sugar
- 1 tbsp milk powder
- 1 tbsp cornflour or stabilising ingredient
- ½ tsp vanilla essence
- A pinch of salt
For butterscotch praline:
- ÂĽ cup sugar
- 1 tbsp butter
- ÂĽ cup chopped cashews or almonds
For flavouring:
- 1–2 tbsp butterscotch sauce or caramel sauce
- Butterscotch essence, as required
- Praline crunch for mixing and topping
Method
- In a small bowl, mix cornflour with a little cold milk and keep it aside.
- Heat full cream milk in a pan and add sugar, milk powder, and a pinch of salt.
- Stir well and cook until the milk becomes slightly rich and flavourful.
- Add the cornflour mixture and cook until the base thickens lightly.
- Switch off the flame and allow the mixture to cool completely.
- Add fresh cream, vanilla essence, butterscotch essence, and butterscotch or caramel sauce.
- Blend the mixture until smooth and creamy.
- Pour into a freezer-safe container and freeze until semi-set.
- Remove, blend again for a smoother texture, and fold in crushed butterscotch praline.
- Freeze again until fully set.
- Scoop and serve with extra praline crunch or caramel drizzle.
For praline:
Melt sugar in a pan until it caramelises. Add butter and chopped nuts. Pour on a greased surface, let it cool, and crush into small pieces.
