Ingredients
For the biscuit dough:
- 1 cup whole wheat flour / atta
- ÂĽ cup oats flour
- 2 tbsp wheat bran or powdered oats
- ÂĽ cup powdered dates, coconut sugar, or natural sweetener
- ÂĽ cup cold ghee or butter
- ÂĽ tsp baking powder
- A pinch of salt
- ÂĽ tsp cardamom powder or cinnamon powder
- 2–3 tbsp milk, only if required
For finishing:
- Sesame seeds, optional
- Chopped nuts, optional
- A little milk for brushing, optional
Method
- In a bowl, mix atta, oats flour, wheat bran or powdered oats, natural sweetener, baking powder, salt, and cardamom or cinnamon powder.
- Add cold ghee or butter and rub it into the flour mixture using your fingertips until it looks crumbly.
- Add milk little by little only if required and bring the mixture together into a firm dough.
- Do not knead too much, otherwise the biscuits may become hard.
- Cover and rest the dough for 10–15 minutes.
- Roll the dough evenly and cut into round or square biscuit shapes.
- Prick lightly with a fork for a classic digestive biscuit look.
- Place the biscuits on a lined baking tray.
- Brush lightly with milk if needed and sprinkle sesame seeds or nuts.
- Bake in a preheated oven until the biscuits are firm, lightly golden, and crisp.
- Cool completely before storing in an airtight jar.
