Sample Recipe Preview: Punjabi Pinni
Here is a small glimpse of what you will learn in the class.
Ingredients
For the pinni base:
- 1 cup whole wheat flour
- ½ cup desi ghee
- ½ cup powdered jaggery or boora sugar
- ¼ cup gond, fried and crushed
- ¼ cup chopped almonds
- ¼ cup chopped cashews
- 2 tbsp chopped pistachios
- 2 tbsp melon seeds
- 2 tbsp grated dry coconut
- ½ tsp cardamom powder
- A pinch of nutmeg powder, optional
For extra richness:
- 1 tbsp edible gum powder, optional
- 1 tbsp roasted makhana powder, optional
- 1 tbsp raisins, optional
Method
- Heat ghee in a heavy-bottom pan on low flame.
- Add gond little by little and fry until it puffs up properly. Remove, cool, and crush it lightly.
- In the same ghee, add whole wheat flour and roast on low flame.
- Keep stirring continuously until the flour turns golden, aromatic, and releases a rich nutty fragrance.
- Add chopped almonds, cashews, pistachios, melon seeds, coconut, and optional makhana powder. Roast lightly.
- Switch off the flame and allow the mixture to cool slightly.
- Add crushed gond, cardamom powder, nutmeg powder, and powdered jaggery or boora sugar.
- Mix everything well while the mixture is still warm enough to bind.
- Take small portions and shape into round pinnis using your palms.
- Allow the pinnis to set completely before storing them in an airtight container.
