  • ¼ cup gond, fried and crushed
  • ¼ cup chopped almonds
  • ¼ cup chopped cashews
  • 2 tbsp chopped pistachios

  • ½ tsp cardamom powder
  • A pinch of nutmeg powder, optional

For extra richness:

  4. Keep stirring continuously until the flour turns golden, aromatic, and releases a rich nutty fragrance.
  5. Add chopped almonds, cashews, pistachios, melon seeds, coconut, and optional makhana powder. Roast lightly.
  6. Switch off the flame and allow the mixture to cool slightly.
  7. Add crushed gond, cardamom powder, nutmeg powder, and powdered jaggery or boora sugar.
  8. Mix everything well while the mixture is still warm enough to bind.
  9. Take small portions and shape into round pinnis using your palms.
  10. Allow the pinnis to set completely before storing them in an airtight container.
