- 2 tbsp tomato puree
- ¼ tsp red chilli powder
- ¼ tsp roasted cumin powder
- Salt to taste
- 1 tbsp boiled corn
- 1 tbsp boiled rajma or beans
For the filling:
- ¼ cup sautéed vegetables
- 2 tbsp grated cheese
- 2 tbsp salsa
- 1 tbsp sour cream or hung curd dip
- 1 tbsp lettuce or cabbage, shredded
- 1 tbsp onion relish
For extra flavour:
- Jalapeños, optional
- Crushed nachos, optional
- Frankie masala or Mexican seasoning
Method
- Heat oil in a pan and sauté chopped onion and capsicum for a minute.
- Add tomato puree, red chilli powder, roasted cumin powder, and salt. Cook until the mixture becomes slightly thick.
- Add cooked rice, boiled corn, and rajma. Mix well to make flavourful Mexican rice.
- Warm the tortilla lightly on a tawa so it becomes soft and easy to roll.
- Spread salsa and sour cream or hung curd dip on the tortilla.
- Add a layer of lettuce or cabbage for freshness and crunch.
- Place the Mexican rice filling in the centre.
- Add sautéed vegetables, cheese, onion relish, and optional jalapeños or crushed nachos.
- Fold the sides and roll tightly into a burrito.
- Roast the burrito on a tawa with a little butter or oil until golden and crisp from outside.
- Cut diagonally and serve hot with salsa, dip, or chutney.
