For the filling:
- 1 tbsp oil
- ½ cup chopped capsicum
- ¼ cup chopped onion
- ¼ cup boiled corn
- ¼ cup chopped tomatoes
- ½ cup boiled beans or refried beans
- ½ tsp taco seasoning
- ½ tsp red chilli flakes
- Salt to taste
- 1 tbsp roasted tomato salsa
- ½ cup grated cheese
For assembling:
- 2 flour tortillas
- Butter or oil for roasting
- Sour cream for serving
- Guacamole for serving
- Salsa for serving
Method
- Heat oil in a pan and add chopped onion, capsicum, corn, and tomatoes.
- Sauté on high flame for a few minutes so the vegetables stay slightly crunchy.
- Add boiled beans or refried beans, taco seasoning, chilli flakes, salt, and roasted tomato salsa.
- Mix well and cook until the filling becomes flavourful and slightly thick.
- Place one tortilla on a flat surface.
- Spread the vegetable filling on one half of the tortilla.
- Add grated cheese generously over the filling.
- Fold the tortilla and press gently.
- Heat a tawa or pan and apply a little butter or oil.
- Roast the quesadilla from both sides until golden, crisp, and the cheese melts inside.
- Cut into triangles and serve hot with sour cream, guacamole, and salsa.
