  • ¼ cup sugar
  • 1 tbsp milk powder
  • 1 tbsp cornflour or stabilising ingredient
  • ½ tsp vanilla essence
  • A pinch of salt

For butterscotch praline:

  • ¼ cup sugar
  • 1 tbsp butter
  • ¼ cup chopped almonds or cashews

For flavouring:

  • 1–2 tbsp butterscotch sauce or caramel sauce
  • Butterscotch essence, as required
  • Crushed praline for mixing and topping

Method

  1. In a small bowl, mix cornflour with a little cold milk and keep it aside.
  2. Heat full cream milk in a pan and add sugar, milk powder, and a pinch of salt.
  3. Stir well and cook until the milk becomes slightly rich and flavourful.
  4. Add the cornflour mixture and cook until the base thickens lightly.
  5. Switch off the flame and cool the mixture completely.
  6. Add fresh cream, vanilla essence, butterscotch essence, and butterscotch or caramel sauce.
  7. Blend until the mixture becomes smooth and creamy.
  8. Pour into a freezer-safe container and freeze until semi-set.
  9. Remove and blend again to improve the texture and reduce ice crystals.
  10. Fold in crushed butterscotch praline.
  11. Freeze again until fully set.
  12. Scoop and serve with extra praline crunch or caramel drizzle.
