- 2 tbsp brown sugar or caramel syrup
- ÂĽ tsp cinnamon powder
- ÂĽ tsp nutmeg powder
- A pinch of clove powder
For the cake batter:
- 1 cup all-purpose flour
- ÂĽ cup powdered sugar
- ½ tsp baking powder
- ÂĽ tsp baking soda
- A pinch of salt
- ÂĽ cup oil or melted butter
- ½ cup milk
- ½ tsp vanilla essence
- 1 tsp orange zest
- 1 tbsp caramel syrup
For finishing:
- Chopped nuts
- Soaked fruits
- Orange zest
- Warm glaze, optional
Method
- In a pan, add orange juice, chopped dry fruits, raisins, dates, candied peel, nuts, brown sugar or caramel syrup, and spices.
- Cook on low flame for a few minutes until the fruits soften and absorb the flavour.
- Switch off the flame and allow the fruit mixture to cool completely.
- In a bowl, sieve flour, baking powder, baking soda, salt, and powdered sugar.
- In another bowl, mix oil or melted butter, milk, vanilla essence, orange zest, and caramel syrup.
- Add the wet mixture to the dry ingredients and gently fold to make a smooth batter.
- Add the cooled soaked fruit mixture and mix lightly. Do not overmix.
- Pour the batter into a lined cake tin.
- Top with chopped nuts and soaked fruits for a festive look.
