Ingredients
For the eggless red velvet sponge:
- 1 cup all-purpose flour
- 1 tbsp cocoa powder
- ½ cup powdered sugar
- ¼ cup oil
- ½ cup milk
- ¼ cup curd
- ½ tsp baking powder
- ¼ tsp baking soda
- ½ tsp vanilla essence
- ½ tsp vinegar
- Red food colour, as required
- A pinch of salt
For the cherry fruit compote:
- ½ cup chopped cherries
- 2 tbsp sugar
- 1 tsp lemon juice
- 2 tbsp water
For the cream cheese frosting:
- ½ cup cream cheese
- ½ cup whipped cream
- 2–3 tbsp icing sugar
- ½ tsp vanilla essence
Method
- In a bowl, sieve flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix sugar, oil, curd, milk, vanilla essence, vinegar, and red colour.
- Add the dry ingredients to the wet mixture and mix gently to form a smooth batter.
- Pour the batter into a greased and lined cake tin.
- Bake in a preheated oven until the sponge is soft, risen, and done.
- Let the sponge cool completely before slicing.
- For the cherry compote, cook cherries, sugar, lemon juice, and water until slightly thick and glossy. Cool completely.
- For frosting, mix cream cheese, whipped cream, icing sugar, and vanilla until smooth and stable.
- Slice the sponge into layers.
- Fill each layer with cream cheese frosting and cherry compote.
- Finish the cake with frosting, crumbs, cherries, or elegant decoration.
