For the gluten-free base:
- 1 cup jowar flour, millet flour, or gluten-free flour mix
- 2 tbsp curd or vegan curd
- 1 tbsp oil
- ¼ tsp baking powder
- Salt to taste
- Water as required
For the pizza sauce:
- ½ cup tomato puree
- 1 tsp oil
- 1 tsp chopped garlic
- ½ tsp oregano
- ½ tsp chilli flakes
- Salt to taste
- A pinch of black pepper
- A pinch of natural sweetener, optional
For the exotic sautéed vegetables:
- ¼ cup bell peppers
- ¼ cup mushrooms
- ¼ cup zucchini or baby corn
- ¼ cup onion
- 1 tsp oil
- Salt and pepper to taste
- Mixed herbs as required
For topping:
- Cheese or vegan cheese, optional
- Fresh basil or coriander
- Chilli flakes
- Oregano
Method
- In a bowl, mix gluten-free flour, curd, oil, baking powder, and salt.
- Add water little by little and make a soft dough. Rest it for a few minutes.
- Roll the dough gently into a small pizza-style base.
- Cook the base on a hot tawa from both sides until it becomes firm and lightly cooked.
- For the sauce, heat oil in a pan and add chopped garlic.
- Add tomato puree, oregano, chilli flakes, salt, pepper, and a little natural sweetener if required. Cook until the sauce becomes thick and flavourful.
- In another pan, sauté bell peppers, mushrooms, zucchini, baby corn, and onion with oil, salt, pepper, and herbs.
- Spread pizza sauce on the gluten-free base.
- Add sautéed vegetables and cheese or vegan cheese if using.
- Cook on a covered tawa until the base becomes crisp and the topping is heated properly.
- Garnish with herbs, chilli flakes, and serve hot.
