For the sponge layer:
- 1 cup vanilla sponge crumbs or cubes
- 2–3 tbsp rasmalai milk for soaking
- A pinch of cardamom powder
For the cream layer:
- ½ cup whipped cream
- 1 tbsp condensed milk or sweetened milk reduction
- A few drops of rasmalai essence, optional
- A pinch of saffron soaked in warm milk
- 1 tbsp chopped pistachios and almonds
For assembling:
- 2 small rasmalai pieces, chopped
- 1 tbsp rabri or thick rasmalai milk
- Chopped pistachios
- Rose petals, optional
- Saffron strands, optional
Method
- Cut or crumble the vanilla sponge into small pieces.
- Mix rasmalai milk with a little cardamom powder.
- In another bowl, fold whipped cream with condensed milk, saffron milk, and rasmalai essence if using.
- Place a layer of sponge at the bottom of the tub.
- Soak lightly with rasmalai milk. Do not over-soak, otherwise the tub cake may become soggy.
- Add a layer of saffron-cardamom cream.
- Add chopped rasmalai pieces and a little rabri or thick rasmalai milk.

- Chill before serving for the best flavour and texture.
