  • ½ cup thick curd
  • 1 tsp ginger-garlic paste
  • ½ tsp red chilli powder
  • ½ tsp turmeric powder
  • ½ tsp coriander powder
  • ½ tsp roasted cumin powder
  • 1 tsp achari masala
  • ½ tsp kasuri methi
  • 1 tsp lemon juice
  • 1 tbsp mustard oil or regular oil
  • Salt to taste
  • Onion cubes
  • Capsicum cubes
  • Tomato cubes, optional

For smoky flavour:

  • 1 small piece charcoal
  • ½ tsp ghee

For serving:

  • Green chutney
  • Dahi pudina chutney

Method

  1. In a bowl, mix thick curd, ginger-garlic paste, red chilli powder, turmeric powder, coriander powder, roasted cumin powder, achari masala, kasuri methi, lemon juice, mustard oil, and salt.
  2. Add paneer cubes, onion cubes, capsicum cubes, and tomato cubes. Mix gently so the paneer and vegetables are well coated.
  3. Let the paneer rest in the marination for some time so the flavours absorb properly.
  4. Heat a tawa, grill pan, air fryer, or oven grill.
  5. Cook the marinated paneer and vegetables until they get light char marks and become flavourful.
  6. For smoky flavour, heat a small piece of charcoal until red hot. Place it in a small bowl inside the paneer bowl, add ghee on top, and cover immediately for a few minutes.
