- ÂĽ cup oil
- ½ tsp baking powder
- ÂĽ tsp baking soda
- 1 tsp vanilla essence
- A pinch of salt
For the sugar-free fruit filling:
- ½ cup chopped fresh fruits
- 2 tbsp fruit puree
- 1 tsp lemon juice
- 1–2 tsp natural sweetener, optional
- 1 tsp cornflour or thickening ingredient, optional
For the frosting:
- 1 cup chilled dairy whipping cream or suitable cream alternative
- 1–2 tbsp powdered natural sweetener
- ½ tsp vanilla essence
- Chopped fruits for layering and decoration
Method
- In a bowl, sieve whole wheat flour, oats flour or almond flour, baking powder, baking soda, and salt.
- In another bowl, mix curd, milk, oil, natural sweetener, and vanilla essence until smooth.
- Add the dry ingredients to the wet mixture and fold gently. Do not overmix.
- Pour the batter into a greased and lined cake tin.
- Bake in a preheated oven until the sponge is soft, golden, and fully baked from the centre.
- Let the sponge cool completely before slicing.
- For the fruit filling, cook fruit puree, chopped fruits, lemon juice, and sweetener lightly until slightly thick. Cool completely.
- Whip the cream with natural sweetener and vanilla until it reaches a spreadable consistency.
- Slice the cake sponge into layers.
