Sample Recipe Preview: Smoky Paneer Tikka

Here is a small glimpse of what you will learn in the class.

Ingredients

For the paneer tikka:

  • 200 g paneer cubes
  • ½ cup thick curd
  • 1 tsp ginger-garlic paste
  • ½ tsp red chilli powder
  • ½ tsp Kashmiri chilli powder
  • ½ tsp roasted cumin powder
  • ½ tsp coriander powder
  • ½ tsp garam masala
  • ½ tsp kasuri methi
  • 1 tsp lemon juice
  • 1 tbsp mustard oil or regular oil
  • Salt to taste
  • Onion cubes
  • Capsicum cubes
  • Tomato cubes, optional

For smoky flavour:

  • 1 small piece charcoal
  • ½ tsp ghee

For serving:

  • Green kebab chutney
  • Onion relish
  • Lemon wedges
  • Chaat masala

Method

  1. In a bowl, mix thick curd, ginger-garlic paste, red chilli powder, Kashmiri chilli powder, roasted cumin powder, coriander powder, garam masala, kasuri methi, lemon juice, mustard oil, and salt.
  2. Add paneer cubes, onion cubes, capsicum cubes, and tomato cubes. Mix gently so the pieces are coated well.
  3. Let the paneer and vegetables rest in the marination for some time so the flavours absorb properly.
  4. Heat a tawa, grill pan, air fryer, or oven grill.
  5. Cook the marinated paneer and vegetables until they get light char marks and become flavourful.
  6. For smoky flavour, heat a small piece of charcoal until red hot. Place it in a small bowl inside the paneer bowl, add ghee on top, and cover immediately for a few minutes.
  7. Remove the charcoal bowl and gently toss the paneer tikka.
  8. Sprinkle chaat masala and serve hot with green kebab chutney, onion relish, and lemon wedges.
