Ingredients
For the paneer tikka:
- 200 g paneer cubes
- ½ cup thick curd
- 1 tsp ginger-garlic paste
- ½ tsp red chilli powder
- ½ tsp Kashmiri chilli powder
- ½ tsp roasted cumin powder
- ½ tsp coriander powder
- ½ tsp garam masala
- ½ tsp kasuri methi
- 1 tsp lemon juice
- 1 tbsp mustard oil or regular oil
- Salt to taste
- Onion cubes
- Capsicum cubes
- Tomato cubes, optional
For smoky flavour:
- 1 small piece charcoal
- ½ tsp ghee
For serving:
- Green kebab chutney
- Onion relish
- Lemon wedges
- Chaat masala
Method
- In a bowl, mix thick curd, ginger-garlic paste, red chilli powder, Kashmiri chilli powder, roasted cumin powder, coriander powder, garam masala, kasuri methi, lemon juice, mustard oil, and salt.
- Add paneer cubes, onion cubes, capsicum cubes, and tomato cubes. Mix gently so the pieces are coated well.
- Let the paneer and vegetables rest in the marination for some time so the flavours absorb properly.
- Heat a tawa, grill pan, air fryer, or oven grill.
- Cook the marinated paneer and vegetables until they get light char marks and become flavourful.
- For smoky flavour, heat a small piece of charcoal until red hot. Place it in a small bowl inside the paneer bowl, add ghee on top, and cover immediately for a few minutes.
- Remove the charcoal bowl and gently toss the paneer tikka.
- Sprinkle chaat masala and serve hot with green kebab chutney, onion relish, and lemon wedges.
