For the lavash dough:
- 1 cup whole wheat flour
- 1 tbsp oil
- ½ tsp salt

- ¼ tsp chilli flakes
- ¼ tsp mixed herbs
- Water as required
For topping:
- Sesame seeds

- A little oil for brushing
Method
- In a bowl, add whole wheat flour, salt, sugar, chopped coriander, lemon zest, chilli flakes, and mixed herbs.
- Add oil and lemon juice, then mix everything well.
- Gradually add water and knead into a semi-soft dough.
- Cover the dough and rest it for 10–15 minutes.
- Roll the dough very thinly for a crisp lavash texture.
- Brush lightly with oil and sprinkle sesame seeds, chilli flakes, and herbs on top.
- Cut into strips, triangles, or any desired cracker shape.
- Place on a baking tray and bake until crisp, golden, and crunchy.
