For the millet bread dough:
- ½ cup sorghum or jowar flour
- ¼ cup ragi flour
- ¼ cup rice flour
- 2 tbsp tapioca flour or arrowroot flour
- 1 tsp instant yeast
- 1 tsp sugar
- ½ tsp salt
- 1 tbsp oil
- ¾ cup warm water, as required
For the garlic flavouring:
- 1 tbsp finely chopped garlic
- 1 tbsp chopped coriander or parsley
- ½ tsp mixed herbs
- ¼ tsp chilli flakes
- 1 tbsp melted butter or oil
For topping:
- Sesame seeds
- Mixed herbs
- Garlic butter or oil for brushing
Method
- In a bowl, mix jowar flour, ragi flour, rice flour, tapioca or arrowroot flour, instant yeast, sugar, and salt.
- Add oil and gradually add warm water to form a soft, thick, batter-like dough. Millet bread dough will not feel like regular wheat dough.
- Add chopped garlic, herbs, chilli flakes, and coriander or parsley. Mix well.
- Transfer the mixture into a greased loaf tin and level the top gently.
- Cover and keep it for proofing until the batter becomes slightly airy and rises.
- Brush the top with garlic butter or oil.
- Sprinkle sesame seeds and mixed herbs for a beautiful finish.
- Bake in a preheated oven until the loaf is firm, aromatic, and lightly golden.
- Allow the bread to cool completely before slicing.
