Ingredients
For the Ambali base:
- ½ cup cooked millet Ambali
- ½ cup curd
- ÂĽ cup water, if required
- Salt to taste
For tempering:
- 1 tsp oil or ghee
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- 1 tsp urad dal, optional
- 1 green chilli, chopped
- 6–8 curry leaves
- A pinch of hing
For freshness:
- 1 tbsp grated carrot
- 1 tbsp chopped cucumber
- 1 tbsp pomegranate, optional
- Fresh coriander for garnish
Method
- Take cooked and cooled Ambali in a bowl.
- Add curd and mix well until smooth and creamy.
- Add a little water if needed to adjust the consistency.
- Add salt and mix gently.
- Heat oil or ghee in a small pan.
- Add mustard seeds, cumin seeds, urad dal, green chilli, curry leaves, and hing.
- Pour the tempering over the Ambali curd mixture.
- Add grated carrot, cucumber, and fresh coriander.
- Mix lightly and chill for some time before serving.
- Garnish with pomegranate for a fresh and colourful finish.
