Ingredients

For the dough:

  • ½ cup millet flour
  • ¼ cup besan
  • ¼ cup rice flour or jowar flour
  • 1 tbsp sesame seeds
  • ½ tsp ajwain
  • ¼ tsp turmeric powder
  • ½ tsp red chilli powder
  • ½ tsp roasted cumin powder
  • Salt to taste
  • 2 tbsp oil or ghee
  • Water as required

For finishing:

  • Oil or ghee for brushing
  • Chaat masala, optional

Method

  1. In a bowl, mix millet flour, besan, rice flour or jowar flour, sesame seeds, ajwain, turmeric, red chilli powder, roasted cumin powder, and salt.
  2. Add oil or ghee and rub it well into the flour mixture until it feels crumbly.
  3. Add water little by little and make a firm dough.
  4. Rest the dough for 10–15 minutes.
  5. Roll the dough into a thin sheet using dry flour if needed.
  6. Cut into small diamond shapes or strips.
  7. Place them on a greased or lined baking tray.
  8. Brush lightly with oil or ghee.
  9. Bake in a preheated oven until crisp and lightly golden.
  10. Cool completely before storing in an airtight jar.
