Ingredients
For the puff pastry sheet:
- Homemade puff pastry dough or puff pastry sheet
- Dry flour for dusting
- Milk or butter for brushing
For the aloo filling:
- 3 boiled potatoes, mashed
- 1 tbsp oil
- ½ tsp cumin seeds
- 1 tsp ginger-green chilli paste
- ÂĽ cup finely chopped onion, optional
- ÂĽ tsp turmeric powder
- ½ tsp red chilli powder
- ½ tsp coriander powder
- ½ tsp garam masala
- ½ tsp amchur powder or lemon juice
- Salt to taste
- 1 tbsp chopped coriander
Method
- Heat oil in a pan and add cumin seeds.
- Add ginger-green chilli paste and sauté for a few seconds.
- Add chopped onion if using and cook until soft.
- Add turmeric powder, red chilli powder, coriander powder, garam masala, amchur powder, and salt.
- Add mashed potatoes and mix well until the filling becomes flavourful and dry.
- Add chopped coriander and let the filling cool completely.
- Roll the puff pastry sheet evenly and cut into rectangles.
- Place a spoonful of cooled aloo filling in the centre of each rectangle.
- Fold the sheet to cover the filling and seal the edges gently.
- Brush the top lightly with milk or butter.
- Bake in a preheated oven until the puffs rise, become flaky, and turn golden.
- Serve hot with chutney, ketchup, or tea.
