Here is a small glimpse of what you will learn in the class.
Ingredients
For grilled paneer tikka:
- 200 g paneer cubes
- ½ cup thick curd
- 1 tsp ginger-garlic paste
- ½ tsp red chilli powder
- ½ tsp roasted cumin powder
- ½ tsp garam masala
- ½ tsp kasuri methi
- 1 tsp lemon juice
- Salt to taste
- 1 tbsp oil
- Onion and capsicum cubes
For herbed rice:
- 1 cup cooked rice
- 1 tbsp butter
- 1 tsp chopped garlic
- 1 tbsp chopped coriander or mixed herbs
- Salt and pepper to taste
For quick makhni sauce:
- 1 cup tomato puree
- 1 tbsp butter
- 1 tsp ginger-garlic paste
- ½ tsp red chilli powder
- ½ tsp garam masala
- 1 tbsp cashew paste or cream
- Salt to taste
- A pinch of sugar, optional
For assembling:
- Stir-fried vegetables
- Stuffed capsicum
- Potato wedges or fries
- Cabbage leaves, optional
- Butter for sizzling effect
Method
- In a bowl, mix curd, ginger-garlic paste, red chilli powder, roasted cumin powder, garam masala, kasuri methi, lemon juice, salt, and oil.
- Add paneer cubes, onion, and capsicum. Mix gently and let it marinate for some time.
- Grill the paneer and vegetables on a tawa until lightly charred and flavourful.
- For herbed rice, heat butter in a pan. Add chopped garlic and sauté lightly.
- Add cooked rice, herbs, salt, and pepper. Toss well and keep aside.
- For makhni sauce, heat butter in a pan. Add ginger-garlic paste and cook for a few seconds.
- Add tomato puree, spices, salt, and sugar. Cook until thick and flavourful.
- Add cashew paste or cream and mix until the sauce becomes rich and smooth.
- Heat a sizzler plate or non-stick tawa until very hot.
- Place cabbage leaves if using, then arrange herbed rice, grilled paneer tikka, stir-fried vegetables, stuffed capsicum, and potato wedges.
- Pour hot makhni sauce over the paneer or on the side.
- Add a little butter around the hot plate or tawa to create a sizzling effect and serve immediately.
