Ingredients
For the rusk loaf:
- 2 cups all-purpose flour or a mix of flour and atta
- ¼ cup sugar
- 1 tsp instant yeast
- ¼ tsp salt
- ½ tsp elaichi powder
- 2 tbsp milk powder
- 2 tbsp butter or oil
- ¾ cup warm milk, as required
For finishing:
- Milk for brushing
- A little sugar for sprinkling, optional
- Extra elaichi powder, optional
Method
- In a bowl, mix flour, sugar, instant yeast, salt, elaichi powder, and milk powder.
- Add warm milk little by little and start forming a soft dough.
- Add butter or oil and knead until the dough becomes smooth and elastic.
- Cover and allow the dough to proof until it doubles in size.
- Shape the dough into a loaf and place it in a greased bread tin.
- Allow it to proof again until light and puffy.
- Brush the top with milk and bake until the loaf becomes golden and fully baked.

- Cut into even slices using a sharp knife.
- Arrange the slices on a baking tray and bake again at low temperature until crisp and dry.
- Flip once during baking so both sides become evenly crunchy.
