Sample Recipe Preview: Classic Atta Biscuits
Here is a small glimpse of what you will learn in the workshop.
Ingredients
For the biscuit dough:
- 1 cup whole wheat flour
- ¼ cup powdered jaggery or khandsari sugar
- ¼ cup desi ghee or unsalted butter
- ¼ tsp baking powder
- A pinch of salt
- ¼ tsp cardamom powder
- 2–3 tbsp milk, only if required
For extra flavour:
- 1 tbsp chopped almonds or pistachios
- 1 tsp sesame seeds, optional
- A pinch of nutmeg, optional
Method
- In a bowl, add whole wheat flour, baking powder, salt, and cardamom powder. Mix well.
- In another bowl, cream desi ghee or butter with powdered jaggery until the mixture becomes light and smooth.
- Add the dry ingredients to the ghee mixture and gently rub everything together.
- Add milk little by little only if needed and bring the mixture together into a soft dough. Do not knead too much.
- Cover and rest the dough for a few minutes.
- Roll the dough evenly and cut into biscuit shapes using a cutter.
- Top with chopped nuts or sesame seeds for a beautiful finish.
- Place the biscuits on a baking tray and bake in a preheated oven until lightly golden.
- Cool completely on a wire rack so the biscuits become crisp.
