Ingredients
Dry ingredients:
- 1 cup all-purpose flour
- ½ cup powdered sugar
- 1 tsp baking powder
- ÂĽ tsp baking soda
- A pinch of salt
Wet ingredients:
- ½ cup curd
- ÂĽ cup oil
- ÂĽ cup milk
- ½ tsp vanilla essence
- 1 tsp vinegar or lemon juice
For flavour and softness:
- 1 tbsp milk powder, optional
- 1 tbsp warm milk, if required for batter adjustment
Method
- In a bowl, sieve all-purpose flour, baking powder, baking soda, and salt.
- In another bowl, whisk curd and powdered sugar until smooth.
- Add oil, milk, vanilla essence, and vinegar or lemon juice. Mix well.
- Add the dry ingredients into the wet mixture in batches.
- Gently fold the batter until smooth and lump-free. Do not overmix.
- Check the batter consistency. It should be smooth, flowing, and neither too thick nor too runny.
- Pour the batter into a greased and lined cake tin.
- Tap the tin gently to remove air bubbles.
- Bake in a preheated oven until the cake rises well and a skewer inserted in the centre comes out clean.
- Allow the cake to cool completely before demoulding, slicing, layering, or frosting.
