Sample Recipe Preview: Ragi Flaxseed Cookies

Ingredients
For the cookie dough:
- ¾ cup ragi flour
- ¼ cup oats flour
- 2 tbsp flaxseed powder
- ¼ cup powdered jaggery or coconut sugar
- ¼ cup melted ghee, butter, or coconut oil
- ¼ tsp baking powder
- A pinch of salt
- ¼ tsp cardamom powder or cinnamon powder
- 2–3 tbsp milk or plant-based milk, only if required
For extra crunch:
- 1 tbsp chopped almonds
- 1 tbsp chopped walnuts
- 1 tsp chia seeds or sesame seeds, optional
Method
- In a bowl, mix ragi flour, oats flour, flaxseed powder, baking powder, salt, and cardamom or cinnamon powder.
- In another bowl, mix melted ghee, butter, or coconut oil with powdered jaggery until smooth.
- Add the dry ingredients to the wet mixture and gently combine.
- Add chopped nuts and seeds for extra crunch and nutrition.
- Add milk little by little only if needed to bring the dough together. Do not make the dough too soft.
- Rest the dough for 10 minutes so the millet flour absorbs moisture properly.
- Shape into small cookies and place them on a lined baking tray.
- Flatten slightly and garnish with seeds or chopped nuts.
- Bake in a preheated oven until the cookies are firm, aromatic, and lightly crisp.
- Cool completely before storing, as millet cookies become crispier after cooling.
