For the eggless sponge:
- 1 cup all-purpose flour
- ½ cup powdered sugar
- ½ cup curd or milk-based eggless substitute
- ¼ cup oil

- ½ tsp rose essence or vanilla essence
- A pinch of salt
- Milk as required
For soaking:
- ¼ cup gulab jamun syrup
- 2 tbsp milk
- A few drops of rose water
For filling and decoration:
- ½ cup whipped cream or light malai cream
- 4–5 mini gulab jamuns, chopped
- Chopped pistachios
- Dried rose petals
- Saffron strands, optional
- Silver leaf, optional
Method
- In a bowl, mix flour, baking powder, baking soda, salt, and cardamom powder.
- In another bowl, mix sugar, oil, curd or milk substitute, and rose essence until smooth.
- Add the dry ingredients to the wet mixture and mix gently.
- Add milk little by little to make a smooth cake batter.
- Pour the batter into a greased tin and bake in a preheated oven until the sponge is soft and done.
- Let the sponge cool completely before layering.
- Mix gulab jamun syrup with milk and rose water for soaking.
- Cut the sponge into layers and lightly soak each layer.
- Spread whipped cream or malai cream and add chopped gulab jamun pieces.
- Repeat the layers and finish with cream, pistachios, rose petals, saffron, and mini gulab jamuns.
