For the paneer makhni filling:

  • Rumali roti or soft roti

  • Onion relish
  • Sliced onion
  • Sliced capsicum

Method

  1. Heat butter and oil in a pan.
  2. Add ginger-garlic paste and sauté for a few seconds.
  3. Add tomato puree, red chilli powder, coriander powder, salt, and sugar. Cook until the masala becomes thick and flavourful.
  4. Add cashew paste or cream and mix until the sauce becomes rich and smooth.
  5. Add paneer cubes and kasuri methi. Mix gently so the paneer is coated well in the makhni sauce.
  6. Cook for a few minutes until the filling becomes thick enough for rolling.
  7. Place a rumali roti or soft roti on a flat surface.
  8. Spread dahi chutney on the roti.
  9. Add paneer makhni filling, sliced onion, capsicum, onion relish, and a little chaat masala.
  10. Add cheese if desired.
  11. Fold the sides and roll tightly.
  12. Roast lightly on a tawa with butter or oil until warm and slightly crisp.
