Ingredients

For the dosa:

  • 3 boiled potatoes, mashed roughly
  • 1 tbsp oil
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 1 tsp urad dal, optional
  • 8–10 curry leaves
  • 1 green chilli, chopped
  • 1 tsp grated ginger
  • 1 onion, sliced
  • ÂĽ tsp turmeric powder
  • Salt to taste
  • 1 tbsp chopped coriander
  • Lemon juice, optional

For serving:

  • Sambhar
  • Coconut chutney
  • Tomato chutney

Method

  1. Heat oil in a pan and add mustard seeds, cumin seeds, urad dal, and curry leaves.
  2. Add green chilli, grated ginger, and sliced onion. Sauté until the onion becomes soft.
  3. Add turmeric powder and salt. Mix well.
  4. Add boiled mashed potatoes and mix until the masala comes together.
  5. Add coriander and lemon juice if desired. Keep the filling aside.
  6. Heat a dosa tawa until properly hot.
  7. Pour a ladle of dosa batter and spread it in a thin circular motion.
  8. Drizzle oil or ghee around the dosa and cook until crisp and golden.
  9. Place potato masala in the centre.
  10. Fold the dosa and serve hot with sambhar, coconut chutney, and tomato chutney.
