Ingredients
For the dosa:
- 2 cups fermented dosa batter
- Salt to taste
- Water as required to adjust consistency
- Oil or ghee for cooking
For the potato masala:
- 3 boiled potatoes, mashed roughly
- 1 tbsp oil
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- 1 tsp urad dal, optional
- 8–10 curry leaves
- 1 green chilli, chopped
- 1 tsp grated ginger
- 1 onion, sliced
- ÂĽ tsp turmeric powder
- Salt to taste
- 1 tbsp chopped coriander
- Lemon juice, optional
For serving:
- Sambhar
- Coconut chutney
- Tomato chutney
Method
- Heat oil in a pan and add mustard seeds, cumin seeds, urad dal, and curry leaves.
- Add green chilli, grated ginger, and sliced onion. Sauté until the onion becomes soft.
- Add turmeric powder and salt. Mix well.
- Add boiled mashed potatoes and mix until the masala comes together.
- Add coriander and lemon juice if desired. Keep the filling aside.
- Heat a dosa tawa until properly hot.
- Pour a ladle of dosa batter and spread it in a thin circular motion.
- Drizzle oil or ghee around the dosa and cook until crisp and golden.
- Place potato masala in the centre.
- Fold the dosa and serve hot with sambhar, coconut chutney, and tomato chutney.
