Ingredients
For the millet rice:
- 1 cup cooked millet rice
- 1 tbsp oil or ghee
- ½ tsp mustard seeds
- ½ tsp cumin seeds
- 1 tbsp peanuts
- 1 tbsp cashews, optional
- 1 green chilli, chopped
- 8–10 curry leaves
- ¼ tsp turmeric powder
- 2 tbsp fresh grated coconut
- 1 tbsp lemon juice
- Salt to taste
- Fresh coriander for garnish
For extra flavour:
- 1 tbsp roasted sesame powder, optional
- 1 tbsp boiled corn or vegetables, optional
Method
- Cook the millet rice and allow it to cool slightly so the grains stay separate.
- Heat oil or ghee in a pan.
- Add mustard seeds and cumin seeds. Let them crackle.
- Add peanuts and cashews, then roast until lightly golden.
- Add green chilli and curry leaves. Sauté for a few seconds.
- Add turmeric powder and mix gently.
- Add the cooked millet rice and toss lightly without mashing the grains.
- Add salt and fresh grated coconut. Mix well.
- Switch off the flame and add lemon juice.
- Garnish with fresh coriander and serve warm.
