Ingredients

For the kebab mixture:

  • 1 cup makhana
  • 2 medium boiled potatoes
  • ÂĽ cup grated paneer
  • 2 tbsp roasted peanut powder
  • 1 green chilli, finely chopped
  • 1 tsp grated ginger
  • 1 tbsp chopped coriander
  • ½ tsp roasted cumin powder
  • ½ tsp black pepper powder
  • Sendha namak to taste
  • 1 tsp lemon juice
  • 1–2 tbsp kuttu flour or singhara flour, only if required for binding

For cooking:

  • Ghee or oil for shallow frying

For serving:

  • Green vrat chutney
  • Curd dip
  • Pomegranate seeds, optional

Method

  1. Dry roast the makhana on low flame until crisp. Let it cool and crush it coarsely.
  2. In a bowl, add boiled potatoes, grated paneer, crushed makhana, roasted peanut powder, green chilli, ginger, coriander, roasted cumin powder, black pepper, sendha namak, and lemon juice.
  3. Mix everything well to form a soft kebab mixture.
  4. If the mixture feels too soft, add a little kuttu flour or singhara flour for binding.
  5. Divide the mixture into equal portions and shape into round or oval kebabs.
  6. Heat a little ghee or oil on a tawa.
  7. Shallow fry the kebabs on medium flame until golden and crisp from both sides.
  8. Serve hot with green vrat chutney or curd dip.
