Sample Recipe Preview: Falahari Makhana Kebab
Here is a small glimpse of what you will learn in the class.
Ingredients
For the kebab mixture:
- 1 cup makhana
- 2 medium boiled potatoes
- ÂĽ cup grated paneer
- 2 tbsp roasted peanut powder
- 1 green chilli, finely chopped
- 1 tsp grated ginger
- 1 tbsp chopped coriander
- ½ tsp roasted cumin powder
- ½ tsp black pepper powder
- Sendha namak to taste
- 1 tsp lemon juice
- 1–2 tbsp kuttu flour or singhara flour, only if required for binding
For cooking:
- Ghee or oil for shallow frying
For serving:
- Green vrat chutney
- Curd dip
- Pomegranate seeds, optional
Method
- Dry roast the makhana on low flame until crisp. Let it cool and crush it coarsely.
- In a bowl, add boiled potatoes, grated paneer, crushed makhana, roasted peanut powder, green chilli, ginger, coriander, roasted cumin powder, black pepper, sendha namak, and lemon juice.
- Mix everything well to form a soft kebab mixture.
- If the mixture feels too soft, add a little kuttu flour or singhara flour for binding.
- Divide the mixture into equal portions and shape into round or oval kebabs.
- Heat a little ghee or oil on a tawa.
- Shallow fry the kebabs on medium flame until golden and crisp from both sides.
- Serve hot with green vrat chutney or curd dip.
