For the millet pizza base:
- ½ cup jowar flour or foxtail millet flour
- ¼ cup rice flour
- 2 tbsp tapioca flour or arrowroot flour
- ½ tsp instant yeast
- ½ tsp sugar
- ½ tsp salt
- 1 tbsp olive oil
- ½ cup warm water, as required
For the topping:
- 2–3 tbsp pizza sauce
- ¼ cup sliced capsicum
- ¼ cup sliced onion
- ¼ cup sweet corn
- ¼ cup sliced mushrooms or olives
- ¼ cup paneer cubes or tofu cubes, optional
- ½ tsp mixed herbs
- ½ tsp chilli flakes
- Vegan mozzarella or regular cheese, as required
For finishing:
- Olive oil for brushing
- Fresh basil or coriander
- Extra herbs and chilli flakes
Method
- In a bowl, mix jowar flour or foxtail millet flour, rice flour, tapioca flour, yeast, sugar, and salt.
- Add olive oil and warm water gradually to make a soft dough-like mixture. Millet dough will feel different from regular maida dough, so do not expect the same elasticity.
- Cover and rest the dough until it becomes slightly airy.
- Place the dough on a lined tray and spread it gently into a thin crust using lightly greased fingers.
- Brush the edges with olive oil.
- Spread pizza sauce evenly on the base.
- Add vegetables, paneer or tofu, herbs, chilli flakes, and vegan mozzarella or cheese.
- Bake in a preheated oven until the base is cooked and the topping looks well baked.
- Finish with herbs, chilli flakes, and a light drizzle of olive oil.
- Slice and serve hot.
