Ingredients
For the makhni gravy:
- 1 cup chopped tomatoes
- 8–10 cashews
- 1 tbsp butter
- 1 tsp oil
- 1 tsp ginger-garlic paste
- ½ tsp red chilli powder
- ¼ tsp turmeric powder
- ½ tsp coriander powder
- Salt to taste
- ½ tsp sugar or honey
- ¼ tsp garam masala
- ½ tsp kasuri methi
- 2 tbsp fresh cream
- ½ cup water, as required
For the paneer:
- 1 cup paneer cubes
- 1 tsp butter
- A pinch of red chilli powder
- A pinch of salt
For finishing:
- Fresh cream
- Butter
- Crushed kasuri methi
- Fresh coriander
Method
- In a pan, heat butter and oil together.
- Add ginger-garlic paste and sauté until aromatic.
- Add chopped tomatoes, cashews, red chilli powder, turmeric powder, coriander powder, salt, and a little water.
- Cook until the tomatoes become soft and the cashews are well cooked.
- Cool the mixture slightly and blend it into a smooth paste.
- Strain the gravy for a silky restaurant-style texture.
- Add the strained gravy back to the pan and simmer on low flame.
- Add sugar or honey, garam masala, and crushed kasuri methi. Mix well.
- In another pan, lightly toss paneer cubes with butter, salt, and a pinch of red chilli powder.
- Add the paneer to the makhni gravy and cook for a few minutes.
- Finish with fresh cream, a little butter, and crushed kasuri methi.
- Serve hot with naan, kulcha, roti, paratha, or jeera rice.
