Sample Recipe Preview: Ragda Pattice

Ingredients

For the ragda:

  • 1 cup dried white peas, soaked overnight
  • 1 small onion, finely chopped, optional
  • 1 tomato, finely chopped
  • 1 tsp ginger-green chilli paste
  • ½ tsp turmeric powder
  • ½ tsp red chilli powder
  • ½ tsp roasted cumin powder
  • ½ tsp chaat masala
  • Salt to taste
  • Water as required
  • 1 tbsp oil

For the pattice:

  • 4 boiled potatoes
  • 2 tbsp cornflour or bread crumbs
  • ½ tsp roasted cumin powder
  • ½ tsp chaat masala
  • Salt to taste
  • Oil for shallow frying

For assembling:

  • Khajur ki chutney
  • Teekhi dhaniya chutney
  • Chopped onion
  • Chopped coriander
  • Sev
  • Pomegranate seeds, optional
  • Chaat masala
  • Lemon juice

Method

  1. Pressure cook soaked white peas with salt and turmeric until soft.
  2. Heat oil in a pan and add ginger-green chilli paste. Sauté for a few seconds.
  3. Add chopped tomatoes, spices, and cooked white peas.
  4. Simmer until the ragda becomes flavourful and slightly thick. Keep it warm.
  5. For the pattice, mash boiled potatoes and add cornflour or bread crumbs, roasted cumin powder, chaat masala, and salt.
  6. Mix well and shape into round tikkis.
  7. Shallow fry the pattice on a hot tawa until golden and crisp from both sides.
  8. Place hot pattice on a plate and pour warm ragda over it.
  9. Add khajur chutney, green chutney, onion, coriander, sev, chaat masala, lemon juice, and pomegranate seeds.
  10. Serve immediately while the pattice is crisp and the ragda is hot.
