Ingredients

For boiling chole:

  • 1 cup chickpeas, soaked overnight
  • 1 black tea bag or 1 tsp tea leaves tied in muslin cloth, optional
  • 1 bay leaf
  • 1 black cardamom
  • Salt to taste
  • Water as required

For the masala:

  • 2 tbsp oil or ghee
  • 1 tsp cumin seeds
  • 1 large onion, finely chopped
  • 1 tsp ginger-garlic paste
  • 2 tomatoes, pureed or finely chopped
  • 1–2 green chillies, slit
  • 1 tsp coriander powder
  • ½ tsp cumin powder
  • ½ tsp red chilli powder
  • ½ tsp turmeric powder
  • 1 tsp chole masala
  • ½ tsp garam masala
  • ½ tsp amchur powder or anardana powder
  • Salt to taste
  • Fresh coriander for garnish

For finishing:

  • 1 tbsp ghee
  • Ginger juliennes
  • Lemon wedges
  • Onion laccha

Method

  1. Soak chickpeas overnight and pressure cook them with salt, bay leaf, black cardamom, and tea bag until soft.
  2. Remove the tea bag and keep the cooked chickpeas aside with the water.
  3. Heat oil or ghee in a pan and add cumin seeds.
  4. Add chopped onions and cook until golden.
  5. Add ginger-garlic paste and sauté until aromatic.
  6. Add tomato puree, green chillies, and all dry spices. Cook until the masala becomes thick and releases oil.
  7. Add boiled chickpeas along with some cooking water.
  8. Mash a few chickpeas slightly to make the gravy thicker and more flavourful.
  9. Simmer until the chole absorbs the masala and the gravy becomes rich.
  10. Add garam masala, amchur or anardana powder, and adjust seasoning.
  11. Finish with ghee, ginger juliennes, and fresh coriander.
  12. Serve hot with bhature, onion laccha, lemon wedges, and dahi pudina chutney.
