Ingredients
For the gatte:
- 1 cup besan
- 2 tbsp curd
- 1 tbsp oil
- ¼ tsp turmeric powder
- ½ tsp red chilli powder
- ½ tsp ajwain
- Salt to taste
- Water as required
For the gravy:
- 1 cup curd, whisked
- 1 tbsp oil or ghee
- ½ tsp cumin seeds
- A pinch of hing
- 1 tsp ginger paste
- ½ tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp coriander powder
- ½ tsp garam masala
- Salt to taste
- 1 cup water or gatte boiling water
- Fresh coriander for garnish
Method
- In a bowl, mix besan, curd, oil, turmeric powder, red chilli powder, ajwain, and salt.
- Add very little water and knead into a firm but smooth dough.
- Divide the dough into small logs.
- Boil water in a pan and cook the besan logs until they become firm and float slightly.
- Remove, cool, and cut them into small pieces. These are the gatte.
- Heat oil or ghee in a pan and add cumin seeds and hing.
- Add ginger paste and sauté for a few seconds.
- Lower the flame and add whisked curd mixed with turmeric, red chilli powder, coriander powder, and salt.
- Stir continuously so the curd does not split.
- Add water or gatte boiling water and cook until the gravy becomes smooth and flavourful.
- Add the sliced gatte and simmer for a few minutes so they absorb the gravy.
- Finish with garam masala and fresh coriander.
- Serve hot with baati, missi roti, bajre ki roti, or rice.
