Ingredients

For the pesto sauce:

  • 1 cup fresh basil leaves
  • ¼ cup walnuts or pine nuts
  • 3–4 garlic cloves
  • ¼ cup grated cheese
  • ¼ cup olive oil
  • 1 tbsp lemon juice
  • Salt to taste
  • Black pepper to taste

For the pasta:

  • 1 cup spaghetti
  • Water for boiling
  • Salt for boiling pasta
  • 1 tsp olive oil
  • 2–3 tbsp reserved pasta water

For garnish:

  • Grated cheese
  • Fresh basil leaves
  • Crushed black pepper
  • Toasted nuts

Method

  1. Boil water in a deep pan and add salt.
  2. Add spaghetti and cook until it is soft but still slightly firm to bite.
  3. Reserve a little pasta water before draining the spaghetti.
  4. In a mixer jar, add basil leaves, nuts, garlic, grated cheese, lemon juice, salt, and black pepper.
  5. Blend while slowly adding olive oil until you get a smooth and flavourful pesto sauce.
  6. Heat a pan on low flame and add the cooked spaghetti.
  7. Add pesto sauce and toss gently. Do not overcook the pesto, as fresh basil can lose its colour and flavour.
  8. Add 2–3 tbsp reserved pasta water to make the pasta glossy and well-coated.
  9. Finish with grated cheese, toasted nuts, black pepper, and fresh basil leaves.
  10. Serve immediately for the best flavour and texture.
