Ingredients

For the gujiya outer covering:

  • 1 cup all-purpose flour
  • 2 tbsp ghee
  • A pinch of salt
  • Water as required for kneading

For the filling:

  • ½ cup mawa or khoya
  • 2 tbsp powdered sugar
  • 2 tbsp gulkand
  • 1 tbsp chopped almonds
  • 1 tbsp chopped pistachios
  • 1 tbsp desiccated coconut
  • ½ tsp fennel powder
  • 1–2 finely chopped paan leaves
  • A few drops of paan essence, optional

For sealing and cooking:

  • Water for sealing
  • Ghee or oil for frying

For finishing:

  • Chopped pistachios
  • Dried rose petals
  • Silver leaf, optional

Method

  1. In a bowl, mix all-purpose flour, ghee, and salt. Rub the ghee into the flour until the mixture becomes crumbly.
  2. Add water little by little and knead into a firm dough. Cover and rest the dough for 15–20 minutes.
  3. For the filling, lightly roast mawa on low flame until it becomes aromatic. Let it cool.
  4. Add powdered sugar, gulkand, chopped nuts, coconut, fennel powder, chopped paan leaves, and paan essence. Mix well.
  5. Roll small portions of dough into round discs.
  6. Place a spoonful of filling in the centre.
  7. Apply water on the edges, fold into a half-moon shape, and seal properly.
  8. Shape the edges using a gujiya mould or by hand.
  9. Fry on medium-low flame until crisp and golden.
  10. Cool slightly and garnish with pistachios, rose petals, or silver leaf.
