For the paneer tikka filling:
- 1 cup paneer cubes or paneer strips
- ½ cup thick curd
- 1 tsp ginger-garlic paste
- ½ tsp red chilli powder
- ½ tsp roasted cumin powder
- ½ tsp coriander powder
- ½ tsp garam masala
- ½ tsp kasuri methi
- 1 tsp lemon juice
- Salt to taste
- 1 tbsp oil
- Onion and capsicum slices
For assembling:
- Subway-style bread or long bread roll
- Lettuce or cabbage
- Cucumber slices
- Tomato slices
- Onion rings
- Capsicum slices
- Jalapeños, optional
- Cheese slice, optional
- Mint mayo
- Chipotle sauce
- Sweet onion sauce
- Barbeque sauce, optional
Method
- In a bowl, mix thick curd, ginger-garlic paste, red chilli powder, roasted cumin powder, coriander powder, garam masala, kasuri methi, lemon juice, salt, and oil.
- Add paneer, onion, and capsicum slices. Mix gently and let the filling rest for a few minutes.
- Cook the marinated paneer mixture on a hot pan until lightly roasted and flavourful.
- Slice the bread roll from the centre without cutting it fully apart.
- Lightly toast the bread if desired.
- Spread mint mayo and chipotle sauce inside the bread.
- Add lettuce or cabbage, cucumber, tomato, onion, capsicum, and jalapeños.
- Place the paneer tikka filling over the vegetables.
- Add cheese if using.
- Drizzle sweet onion sauce and barbeque sauce as per taste.
- Close the sandwich, press lightly, and serve fresh.
