Ingredients

For the green curry paste:

  • 4–5 green chillies
  • ½ cup fresh coriander
  • ¼ cup basil leaves
  • 1 tbsp chopped lemongrass
  • 1 tsp grated ginger or galangal
  • 4–5 garlic cloves
  • 1 small onion or shallot
  • ½ tsp roasted cumin powder
  • ½ tsp coriander powder
  • 1 tsp lemon zest or kaffir lime zest
  • 1 tbsp lemon juice
  • Salt to taste
  • 1–2 tbsp water, only if required for grinding

For the curry:

  • 1 tbsp oil
  • 2–3 tbsp green curry paste
  • 1 cup coconut milk
  • ½ cup water or vegetable stock
  • ½ cup broccoli
  • ½ cup baby corn
  • ½ cup bell peppers
  • ¼ cup zucchini or beans
  • ¼ cup mushrooms, optional
  • ½ tsp sugar or jaggery, optional
  • Salt to taste
  • Basil leaves for finishing
  • Lemon juice as required

Method

  1. Grind all the green curry paste ingredients into a smooth paste using very little water.
  2. Heat oil in a pan and add the green curry paste.
  3. Cook the paste for a few minutes until it becomes aromatic and flavourful.
  4. Add coconut milk and water or vegetable stock. Mix well.
  5. Add broccoli, baby corn, bell peppers, zucchini, beans, and mushrooms.
  6. Simmer until the vegetables are cooked but still slightly crunchy.
  7. Add salt and a little sugar or jaggery to balance the flavours.
  8. Add basil leaves and lemon juice towards the end.
  9. Serve hot with jasmine rice, sticky rice, or Thai-style rice.
