Ingredients
For the brownie batter:
- ½ cup ragi flour
- ¼ cup cocoa powder
- ¼ cup almond flour or oats flour
- ½ cup powdered jaggery or coconut sugar
- ¼ cup melted dark chocolate
- ¼ cup melted butter, ghee, or coconut oil
- ½ cup curd or thick plant-based curd
- ¼ cup milk or plant-based milk
- ½ tsp vanilla essence
- ¼ tsp baking powder
- A pinch of salt
For add-ons:
- 2 tbsp chopped walnuts
- 2 tbsp dark chocolate chips
- 1 tbsp seeds, optional
Method
- In a bowl, mix ragi flour, cocoa powder, almond flour or oats flour, baking powder, and salt.
- In another bowl, mix melted dark chocolate, melted butter or oil, powdered jaggery, curd, milk, and vanilla essence.
- Add the dry ingredients to the wet mixture and fold gently.
- Add chopped walnuts and chocolate chips. Do not overmix the batter.
- Pour the batter into a lined baking tin and level the top.
- Sprinkle extra walnuts or chocolate chips on top.
- Bake in a preheated oven until the brownie is set at the edges and slightly fudgy in the centre.
- Let it cool completely before slicing.
